Homemade gluten free bread recipe and photosgraphs

This super simple gluten free bread recipe is made with just six wholesome ingredients. Perfect for those managing coeliac disease or wheat allergies, or if you simply want to cut back on gluten in your diet. This easy recipe offers a delicious solution without compromising on taste or texture.


Ingredients

1.   500ml of natural yogurt

2.   1 egg, beaten

3.   1 tbsp. treacle

4.   300g gluten free oats

5.   2 tsp bread soda

6.   2 tbsp. mixed seeds (optional + extra for topping)

7. Pinch of salt


Method

Place the wet ingredients yoghurt, egg and treacle in a bowl and stir well.


Mix the oats, bread soda, seeds and salt in a separate bowl and then add to the yogurt mixture and stir thoroughly.


Place in a greased or parchment lined 2lb loaf tin, sprinkle with oats and seeds and bake at 180°C / 350°F / Gas mark 4 for 30 minutes.


Then lower temperature to 150°C / 300°F / Gas mark 2 and cook for a further 30 minutes.

Allow to cool before cutting.


Keeps for 2-3 days in an airtight container.


I like to slice the bread and freeze individual portions and thaw them as needed!


Variations

Fruit and Nut Bread

Add chopped apricots or dates and pecan and walnuts.


Savoury Bread

Add some sundried tomatoes, some herbs, olives for a savoury version.
