Roasted Beetroot, Walnut, and Feta Salad

This vibrant roasted beetroot, walnut, and feta salad is a nutrient-dense dish that combines earthy beets, crunchy walnuts, and creamy feta for a deliciously satisfying salad. With the addition of mixed greens and a tangy balsamic dressing, this salad provides a perfect balance of antioxidants, healthy fats, and protein. It's an ideal option for a light lunch, a side dish, or even a hearty addition to a larger meal. Plus, it’s an excellent way to support your gut health and overall wellness!


Ingredients

3-4 medium beetroots, peeled and chopped into wedges

1/2 cup walnuts, toasted

100g feta cheese, crumbled

4 cups mixed salad greens (e.g., arugula, spinach, or mixed baby greens)

1 tbsp olive oil (for roasting beets)

1-2 tbsp balsamic vinegar

1 tbsp honey or maple syrup (optional for dressing)

2 tbsp extra virgin olive oil (for dressing)

1 tsp Dijon mustard

Sea salt and freshly ground black pepper, to taste

Fresh herbs (e.g., parsley or mint), chopped (optional)


Method

  1. Roast the Beetroots:

    • Preheat the oven to 200°C (400°F).

    • Place the beetroot wedges on a baking tray, drizzle with 1 tbsp olive oil, and season with salt and pepper.

    • Roast for 30-40 minutes, or until tender and slightly caramelised. Remove and let cool slightly.

  2. Toast the Walnuts:

    • While the beetroots are roasting, toast the walnuts in a dry skillet over medium heat for about 3-4 minutes, stirring frequently until fragrant and lightly browned. Set aside to cool.

  3. Prepare the Dressing:

    • In a small bowl, whisk together balsamic vinegar, honey or maple syrup (if using), Dijon mustard, extra virgin olive oil, and a pinch of salt and pepper.

  4. Assemble the Salad:

    • In a large bowl or serving platter, place the mixed greens. Add the roasted beetroot wedges, crumbled feta cheese, and toasted walnuts.

    • Drizzle the salad with the balsamic dressing and gently toss to combine.

    • Garnish with fresh herbs, if desired.


Tips

  • You can also add thinly sliced red onions or avocado for an extra layer of flavour.

  • If you prefer a little sweetness, you can roast the beets with a drizzle of balsamic vinegar or maple syrup.


This salad is loaded with antioxidants, healthy fats, and protein, making it a perfect choice for a light lunch or a healthy side dish!
