Watermelon, Mint, Feta & Black Olive Salad

Serves 8


Ingredients

1.5kg fresh watermelon, cubed

1 small red onion, thinly sliced

1 cup pitted black olives

Juice of 4 limes

4 tbsp extra virgin olive oil

⅔ pack of feta cheese, cubed

Small bunch fresh mint, roughly torn

Small bunch parsley, roughly torn

Freshly ground black pepper, to taste

 

Method

  1. Pickle the onions

    Slice the red onion and steep in lime juice for 10 minutes to soften the flavour.

  2. Combine the salad

    Gently toss the watermelon cubes with feta, olives, torn herbs, olive oil and black pepper.

  3. Finish and serve

    Add the onions and lime juice, gently fold everything together, and serve chilled.
