Berry Eton Mess is a light, creamy dessert that hits the sweet spot — no regrets necessary.
Sometimes you just want a little something sweet — especially after a sunny barbecue or dinner with friends. This lighter take on the traditional Eton Mess swaps the usual double cream overload for a mix of Greek yogurt and softly whipped cream, giving you all the indulgence without the sugar crash.
Fresh berries, crushed meringue, and a swirl of vanilla make this a crowd-pleaser, whether you're hosting or just want a summery treat to keep in the fridge.

Ingredients
400g strawberries (quartered) or raspberries, or a mix
1 tsp vanilla extract
500g full-fat Greek yoghurt
250ml whipping cream
4 meringue nests
To garnish
A few extra berries
Fresh mint leaves
Method
Prep the fruit
Reserve a few berries for garnish. Quarter the strawberries, leave raspberries whole.
Crush the meringue
Place meringues in a freezer bag and gently crush with a rolling pin — you want bite-sized pieces, not dust.
Whip the cream
In a bowl, whip the cream with the vanilla until thick and softly whipped.
Combine
Gently fold the cream into the yoghurt — don’t overmix.
Layer the dessert
In 4 glasses or bowls, layer fruit, cream mix, and meringue. Repeat once.
Finish and garnish
Top with reserved berries and scatter over torn mint leaves.
